me (recipe)

Well, this week has been a let-down for me. I've only barely lost 2 lbs, and I've really reduced my carbs dramatically. I guess the difference is I wasn't moving as much. Now that the house is clean, I don't have to work lol Can't win!



I made such an awesome lunch (and dinner) tonight, all for myself. It really was yummy, so I thought I'd share it here.



Since I made it up, I have no idea what to call it except for what it is:



Spaghetti Squash w/Sausage


  • 1 2lb spaghetti squash, cooked*

  • 1 lb polish sausage

  • 1/2 c. chopped green onion

  • 2-3 Tbls. parmesan cheese

  • Butter or margerine


I cut the spaghetti squash in half, remove the seeds. I place the 2 halves cut side up in a baking dish, put about an inch of water in the dish, cover with aluminum foil and bake at 375 for 1 hr. I then let it sit there for a while, cooling.



Boil or microwave the polish sausage, then I cut the links into 2-3" sections, slice lengthwise, and then again (quartered). Then I cut them into bitesized pieces. (You could probably do this before cooking, too.)



Scrape out the spaghetti from the shells with a fork (it'll "splinter" into strands and it's easy to remove) into a bowl. Mix in enough butter or margerine for your own taste. I probably used about 1/4 cup. Sprinkle the cheese, sausage and green onion and toss together. Mangia!



The next time I try this, I'm going to try baking it together for a bit to help the juices from the polish sausage blend in with the sketti some more, but this was absolutely AWESOME. The fresh green onions were perfect for this.



Because I made this only for myself, I only prepared it 1 serving at a time.




I've pieced together the following:




There's 10 (2 fiber) carbs in 1 cup of spaghetti squash.

There's 4 carbs per 4 ounces of sausage.

There's 2 in 1/4 c of green onions

There's 0 in 2 Tbls of cheese



I think that all in all, it was a pretty low carbed meal and it really was GOOD. :)

Baked Eggplant

I don't like eggplant, but, my children loved this from the first time I made it for Chris. It is so simple and low in carbs.

Baked Eggplant

1 Eggplant for every two people
1 cup wheat germ
Salt to taste
Pepper to taste
1 tbs Rosemary
1 tbs Oregano
2 eggs
2 tbs milk

1. Preheat Oven to 375
2. Peel and slice eggplant into thin slices
3. Beat eggs and milk and set aside
4. Mix wheat germ, rosmary, oregano, salt and pepper together
5. Dip eggplant into egg and milk mixture, and then into wheat germ, coating both sides
6. Bake about 10-15 or until golden brown, turning them once
7. Top with marinara ( or spaghetti sauce) and serve hot

Stalling

I know I am stalling. I have done not one single good thing lately unless you count the "Move From Hell" as a work out ( It was definantly something) I am fighting serious depression and for two days the only thing I've been able to bring myself to eat is Fritos and Bean Dip. I know, not healthy at all.

On the flylady end of things, I have been putting our house back in order. This was quiet a feat as everything was moved into one room of the house and simply left there. Since we were low on boxes, it was a frequent site to see people dumping out what boxes we had so that we could move more stuff. I do indeed have a floor now and most of the boxes are now neatly lined up against the walls.

I hope things get better real soon.

slacking lol (recipe)

Well not really. Just slacking in posting. I don't feel like I've made any progress this week in my weight. My scale apparently hated me the day I weighed in at 267 cuz it shot right back to 171 , so it must not have been at 0. :( That 4 lbs really bother me, too.

I've been trying to behave. I keep cutting more carbs, but as a result, I'm hungry. Then I snack but the stuff I'm snacking on isn't good (I bought hubby candy for his birthday - stupid stupid stupid). I gotta figure out what I CAN snack on. At this point, I'm just not happy.

As far as Flylady is concerned, I've done her proud this week. My bedroom is now finally done, and I've been maintaining the downstairs (kitchen and living room) so we're still on track for that stupid inspection next week. Tomorrow, I'll do the bathrooms and then this weekend, the two kid's rooms. Then we'll be up to date.

On Tuesday, I made the following recipe and it was very good - both kids at it! I think next time, I'll be sure to check the carb content of the salsa, cuz I had no idea that some are high in carbs, as phoenix reminded me in IM. *pout* But other than that, next time, I have to make more! LOL



  • 1 lb ground turkey
  • 1 package taco seasoning mix
  • 1/2 c chopped green onion, divided
  • 3/4 c salsa
  • 1 c shredded cheddar
  • 1/3 c black olives
  • 4 Tbls sour cream

In a skillet, over medium-high heat, cook turkey. Stir in seasoning mix and remove from heat. Preheat oven to 375 degrees F.

Spread cooked turkey mixture in the bottom of an 8-inch-square baking dish. Sprinkle 1/2 the green onions over the turkey and top with salsa, then sprinkle cheese over top. Bake for 10 to 15 minutes or until cheese is bubbling and hot. Garnish with the rest of the green onions, olives and a blob of sour cream.

Per serving: 368 calories; 23g fat (56.7% from fat); 29g protein; 11g carb; 2g dietary fiber; 126 cholesterol; 1172 sodium.

Low carb serving suggestions: Make taco-chps from low-carb tortillas. You want the equivalent of 1 tortilla per person. Add a big green salad and you're set.

***MY notes***

I left out the olives, as we just don't do olives. That dropped the carbs down a couple. There were 3 just in the taco seasoning! In any case, this was good, but barely enough for 4 of us, and I served it with salad. We were hungry in 2 hours though. I need to find something more fulfilling to fix with it.

As for flying. Right now i am still just maintaining. Bkid is being a total brat and takes up a lot of my energy these days. But, i have kept my living room, kitchen and 2 bedrooms nice. Tomorrow i WILL start my bathroom.

Eggplant Lasagna

1 lb lean ground beef

4 oz mozzerella cheese (grated)

4 oz parmesan cheese (grated)

Hunts Tomato Sauce

1 eggplant

Italian Seasoning

Oregeno

Garlic Powder

Brown ground beef. Add Italian seasoning, oregeno, and garlic powder to taste. Drain fat. Add tomato sauce. Simmer for 10 minutes.

Spray cooking dish with non stick cooking spray. Peel and slice eggplant. Place slices in the bottom of baking dish. Add a layer of sauce. Add a layer of parmesan cheese. Add a layer of mozzerella cheese. Add a layer of eggplant. Then more sauce, then mozerella, and the parmesan on top. Bake 45 minutes.

Let set 10 - 15 minutes.

Enjoy!

And, for the record, i know i am loosing fast right now. If it continues next week, i will go to the doctor. i think its just that i have made such a drastic change in my activity level.


the weekend (recipe)

Soooo, on Friday, I had a meeting to go to so I made my family their dinner in the crockpot. Here was my recipe:



I only used enough taters for them, so keep that in mind.


Crockpot chicken Ala Dawn



5-6 small potatoes, peeled and quartered

1 med. onion. quartered

2 stalks of celery, cut in 2" pieces

4 bone-in chicken breasts

Italian Seasoning

Garlic Salt



The potatoes went in first. Then I placed the chicken breasts, skin side up, and sprinkled them with italian seasoning and garlic salt. I added the onions and celery and covered it. I cooked it on high from about 11am till about 4. This was AWESOME.



I went to my meeting and they ordered pizza *sniffle* so I just ate the toppings, and left the crust, and had a piece of broccoli quiche. When I got home, starving, I had one of the chicken breasts with the oinions and celery and it was AWESOME.



I tried to behave this weekend, and for the most part, succeeded :) I had a hamburger on just a 1/2 of the bun last night and it was GOOD! I've cut my carbs down considerably and I'm seeing the difference. I weighed in today at 267! 13 lbs in 8? days - woohoo!



I'm psyched. This week, it's supposed to cool off some, and that'll help get me moving more.



pheonix, you're doing AWESOME. I'm sure that your big loss is because of the extra activity, better eating and you know.. better overall FEELINGS! If it happens again this week, then yeah, to the doctor's you go! :)



I'm hungry, I'm gonna go make a big-ass salad :D

The Highlights

Whew, what a week! i will spare you all the drama of broken down vehicles, shrieking children, surly spouses, falling ceilings and demanding extended family. Lets just stick to the highlights.
i have now been a flybaby for just a little over a week. During this time, i have cleaned up my kitchen, living room, and both bedrooms. i have maintained these rooms, and i am working on getting the house decluttered. This week i want to get my bathroom presentable, clean out the desk of doom, and possibly began my back porch. my biggest challenge remains biting off more than i can chew and pushing myself into exhaustion. i am working on it though. i am loving how my house looks now. And, the sense of accomplishment i feel.
As far as weight goes. i weighed last night and the scale said 260. i freaked out a bit, and J weighed, realized they were off and adjusted them. Its actually more like 262. That is still 18 lbs in a little over a week. It worries me a little. i'm not sure its healthy to drop weight that fast. But, i'm thinking that its mostly a combination of a drastically increased activity level, healthier eating, and having weighed to begin with when my period was only a day or two away. We shall see.
All in all i am feeling good about the way my new lifestyle is going. Now if i can only get J to give me some on a more regular basis. hehe!
